At ALMA Cooking Support, our individual lessons provide a comprehensive exploration of diverse cuisines and fundamental cooking techniques. Led by our Chef Davide, these sessions are structured into eight distinct blocks, each spanning 8 to 10 weeks. Each block is meticulously designed to instill culinary prowess and foster a deep understanding of various culinary traditions.
But our journey doesn’t end in the classroom. A special aspect that sets our program apart is that participants take home the meal prepared during the class. This offering isn’t just about learning; it's about extending the joy of cooking to family and friends.
Embarking on a culinary journey with ALMA Cooking Support begins with our foundational block, a cornerstone for all participants entering our program.
Designed as an essential starting point, this block spans 10 immersive weeks, offering a comprehensive introduction to various cooking techniques. Led by our Chef Davide, participants delve into a curated curriculum that covers fundamental aspects of cooking. Each session is crafted to instill confidence and skill, setting the stage for a fulfilling culinary experience. Participants immerse themselves in a hands-on learning environment, each session is meticulously structured to build a solid culinary base.
This part of the program will be focused on Mediterranean cuisine, we will be working with different varieties of vegetables, legumes, grain, meat and some dishes will include seafood as well. There will be influences from Italian cuisine, Spanish and Greek. We will be focusing on the importance of a healthy and balanced diet. The duration of the block will be 8 weeks, and it will include a different meal every week.
This part of the block will be focused on asian cuisine, we will be exploring the most known traditional dishes of different regions and states of Asia. We will focus on spices and asian techniques.The right use of it and the right combination of flavours. We will use techniques such as wok, grilling and steaming. The duration of the block will be 8 weeks, and it will include a different meal every week.
This part of the block will be focused on savoury and sweet. It will include four sweet and four savoury meals. During the class we will use equipment used in pastry, we will be focusing on the importance of the precision, balance of the ingredients and presentation. We will be doing cookies, savoury and sweet pastry, pies,pizza, etc. We will be teaching basic recipes and techniques that are very common in pastry, such as custard, tarte bases ( sweet and savoury) , filling for pies and sausage rolls. The duration of the block will be 8 weeks, and it will include a different meal every week.
This part of the block will be focused on the use of vegetables, grains and legumes. We will create meals that are the right balance between proteins,carbs and fibres. We will be highlighting the importance of following a healthy and good diet. We will teach that it is possible to create a nice flavorful meal without the use of any animal protein with a fair budget.We will be using techniques such as steaming, grilling, baking. The duration of the block will be 8 weeks, and it will include a different meal every week.
This part of the block will be more suitable for our youngest participants and participants who are working. We will be making a meal suitable to be reheated the following day or good to be consumed at room temperature. It will include more snacks/street food style. We have been thinking of doing that to make our participants proud of what they did and show their friends/ colleagues , in addition a healthy meal will help with focus and performance! The duration of the block will be 8 weeks, and it will include a different meal every week.
This part of the block is focused on going shopping, and with a low budget ( 8-10 $) buy the ingredients to prepare a meal. The chef will meet the participant at the supermarket, together they will look for ingredients on special or low price, after it, they will go back to the kitchen and together create a meal and the recipe. The participant will cook the recipe by themselves at home,following the recipe and the instruction given by the chef. The idea of this block is to teach how to shop with a budget and use the creativity and the knowledge from the previous classes in order to execute a meal at home. The duration of the block will be 8 weeks.
